Chicken Waldorf Salad
20 minutes (for chicken)
1 tablespoon vinegar
2 teaspoons fresh lime or lemon juice
1/4 teaspoon salt
3 cups cooked chicken breast
1/2 cup raisins or dried cranberries
1 cup halved or whole red or green grapes (organic)
1/2 cup almond pieces, (toasted with honey if preferred)
Favorite lettuce variety. - I like to mix kale or spring mix and something with a crunch.
Mix avocados, vinegar, lemon juice, and salt in blender or serve avocados as easiest for you, such as cut in chunks.
Combine chopped and cooked chicken breasts, lettuce, and other ingredients. Top with the blended avocado mixture as dressing or lightly drizzle on olive oil and a vinegar and honey mixture.
Honey mustard (mixing yellow mustard and honey) is also a great dressing.
Goat cheese is a great addition to this salad too.
Use leftover cooked chicken breasts to avoid cooking same day.
