Strawberry Jam Style
5-8 cups chopped fresh or frozen strawberries
2 Tsp lemon juice
1 cup local honey
Add all ingredients to a pan.
Heat pan to medium heat or higher.
Stir occasionally while heating.
It should start to bubbles and develop foam after several minutes.
Mash strawberries up with fork, and stir. (Be careful of splatter, but I haven't had a problem
with this here. I suppose you could stick the strawberries in a blender with
1/4 cup water to blend before heating.)
Occasionally use a spoon to see how thick it is.
It is done when it has thickened almost to the consistency of syrup.
It will thicken more when it cools, so not too much.
The more sauce you try to cook at one time, the longer it takes to cook.
Heavenly! Pour over pancakes, put in smoothies, over biscuits, toast, and more.
